Honestly, 4gb of memory is not enough, 8 is pretty standard now especially considering you will have crossfire/sli. If you aren't going with an Intel K processor then you might as well get amd or more importantly drop the mobo down to a Gigabyte or Asus board for about $200 and get the K series processor.
16Gb is good because its ahead of where we are moving to, more than likely you will never replace that ram until the board is dead because there's no huge benefit to doing so. Going with 2 4gb sticks is the best decision (especially if building new and even 1x8gb stick is still pretty good because then you have the ability to use in the future 32gb however i doubt by that time it would even matter because you probably would need an upgrade anyway) because if you go with 2 2gb sticks then you are pretty screwed in the near future because ram usuage is only going to increase. From my experience, having 32gb (overkill) of ram with just minimal startup processes (around 80-100 i think and with steam open and maybe a few tabs of chrome, I'm at 4.5gb -5gb leaving anywhere from 6.5gb usage to 7gb when playing a game which is cutting it close on 8.
